In answer to the ever-changing business model, thanks to COVID-19, Minnetonka’s Bacio Restaurant has added a mobile kitchen called Bacio-A-GoGo to its line up. "In the past several months, we learned a lot about preparing quick, portable meals that still meet our quality standards," said Bob Tinsley, Bacio owner. The truck measures more than 22-feet long, with a service kitchen sporting top-of-the-line equipment, including: Imperial broilers and dual fryers; a 6-burner Globe gas stove, grill and charbroiler; hot holding cabinets, Southbend TruVection ovens, a Beverage-Air freezer and Everest refrigeration units, all powered by a Cummins Quiet Diesel commercial generator. In addition to high-end catering, the mobile kitchen is licensed to serve cocktails, beer, and wine.


Starting in early August, Hell’s Kitchen started climbing the stairs to offer curbside pick-up so consumers could take a little "hell home." Since the devil is in the details, their location in the basement of the Medical Arts Building presented a challenge at first, but the popular downtown eatery is asking consumers to order online, pull up in their car under the flashing red awning and a staff member will run the order straight to the car. 


Marshall, Minnesota-based Schwan’s Food Service has joined forces with CJ CheilJedang (CJCJ) subsidiary, TMI Trading, to offer 100-plus authentic Asian menu items for foodservice operators. Schwan’s has also acquired a portion of TMI trading. Asian food is rapidly growing in popularity in the U.S., especially with younger consumers, the press release said. In K-12 schools, where Schwan’s has more than four decades of experience, 77 percent of students said they want Asian food on the menu and 50 percent want it offered weekly or more often, according to a Schwan's survey. 


Grand Ole Creamery and popular distiller Bent Brewstillery have created limited-time specialty food and drink options to celebrate the Roseville in Bloom public art project through October 31. Grand Ole Creamery created the Blooming Rose dairy-free mango strawberry sorbet that's available exclusively at its Potluck Food Hall location at Rosedale Center. Roseville-based distiller Bent Brewstillery crafted the Roses & Rhubarb cocktail which is a mix of the distillery’s Gunner Ghost Gin, rose water, rhubarb syrup and a splash of lime juice, available at its taproom.
