Peter Mihajlov and Phil Roberts
Who better to accept this award than Hospitality Icons Peter Mihajlov and Phil Roberts, the founding partners of Parasole, a collection of wildly successful restaurant concepts, ranging from the top-grossing Manny’s to Pittsburgh Blue to Chino Latino. In all, their portfolio has grown to 13 original restaurants that have helped shape the dining landscape in the Twin Cities.
In 1977, Roberts sold a thriving commercial design practice to open his first restaurant, Muffuletta Cafe, with Mihajlov. He founded Idein, a consulting group to the hospitality industry and created national brands: Buca di Beppo, a quirky Italian concept in 26 states, and the Oceanaire Seafood Room.
Prior to Parasole, Mihajlov held a variety of marketing and brand management positions, including VP of marketing for Pillsbury’s Refrigerated Foods Business Unit. In 2007, Mihajlov was inducted into the Minnesota Restaurant Hall of Fame, in recognition of his impact on the Minnesota restaurant scene and his dedication to the industry. A founder of the association’s education foundation, he dedicates countless hours to serving as its chief ambassador and organizer.
An unlikely pair, the duo works well together. The video shown at the ceremony referred to them as the Odd Couple, and they proved why their chemistry worked so well in their videoed acceptance speech.
